Chef Leo Bravo launched Ecuadorian cuisine at Melbourne's Il Mercato Centrale food hall on Collins Street after serving his community from his apartment. The stall features hornado, whole roast pork with crisp chicharron rinds, potato pancakes and hominy. Bolon, a plantain and pork ball topped with egg and aji sauce, and ceviche round.
